Recipe: Sweet Potatoes

During vata season, it is best to eat warm, naturally sweet foods. Kapha types should not eat too many sweet foods, since it goes against their type. The following recipe is a great side dish for this time of year. It is also pretty and really easy. It tastes like it is full of fat and refined sugar, but it is a healthy treat.

“Candied” Sweet Potatoes
  • 4-5 large sweet potatoes, sliced in ½ inch slices
  • 1/2 cup water
  • 1/2 cup agave nectar
  • 1t cinnamon and heavy dash of black pepper
  • 1 T olive oil

Place sweet potatoes in a 9x13 greased pan. Mix remaining ingredients and toss with sweet potatoes. Cover pan with foil and bake at 375 degrees until the sweet potatoes are soft, about 40 minutes. Uncover pan and bake for another 15-20 minutes until the liquid becomes syrupy and slightly thick. If you like nuts, you can garnish with chopped almonds or pecans on top.
